Strawberry and basilic tart
I do like winter, being at home and enjoying the warmth of my house, comfort food; the stews, hot soups, the roast dishes, the warm fireplaces and the amazing smell of wet earth after a downpour of rain, I like all these things but this year I cannot wait to plant what I sowed, I just can’t wait for the arrival of spring!
We have had cold weather and rain week after week and last week we even had snow. It has been quite impossible to work outside but spring is in the air, flowers here and there and buds on the trees.
Today, when it finally stopped raining we saw the first flowers; it is just so very beautiful. This inspired me to make a quick, a really super quick desert to celebrate the arrival of spring.






INGREDIENTS
1 packet Philo pastry
2 packets double cream
2 kg strawberries
4 heaped tbspoons of sugar
1 tbspoon lemon juice
50g melted butter
50g white chocolate
Fresh basil leaves
Method
1- Hull the strawberries, wash and dry rolling them in kitchen paper, cut into slices.
2-Mix the cream, sugar and lemon juice in a bowl using a whisk until mixture resembles a thick cream. Place in the fridge.
3- Melt the butter and turn on the oven.
4- Place a sheet of philo pastry on a sheet of kitchen paper and lightly brush with melted butter, repeat until you have ten sheets of philo pastry. Lift this onto a tart pan. Place in the oven until the pastry is golden and crisp.
5- Leave to cool on a wire rack.
6- Fill with the strawberry, lemon and basil cream and grated white chocolate.
It is ready to serve.
