Praliné oranges

Among all the orange trees on the farm there is one we treasure above all the others. It is considerably older and we look after it and cherish it in much the same way as one does an older great grandparent.

Serves 4

6 oranges
240 g sugar
2 tablespoons Orange juice
1 tablespoon water
100 g laminated almonds

Method

Prepare in advance the praliné.

1 – Place the sugar and lemon juice in a pan and bring to the boil over medium heat until the sugar starts to dissolve.
2 – Add the water and boil for about 25 minutes until the syrup is golden.
3 – Join in the almonds and boil for 2 or 3 further minutes).
4 – Pour the syrup onto a greased baking tray and allow cooling and hardening.
There are two methods of breaking up the praline. You can either use a kitchen blender or use a mallet. Set aside.

Peel the oranges making sure you remove the pith. Cut them into segments or slices, place them on the serving dish and sprinkle the praline. Serve immediately.

*You can make this recipe leaving out the almonds, only using the fudge. It is just as delicious.
