Aromatic herbs in the kitchen

Herbs have regained their importance in our kitchens mostly because they can be used fresh or dried, on their own or mixed with other herbs and are an excellent substitute for seasoning such as salt. Besides giving a special touch to any dish, we should not forget herbs represent the most natural and healthy way to prevent diseases.

Coriander

Both coriander leaves and coriander seeds can be eaten fresh or dry. Coriander can be used in salads, rice, stews, soups, sauces, fish, seafood or dishes with more exotic flavours. This herb is a strong tranquillizer for stomach aches and the lowering of cholesterol in the blood.

Oregano

Fresh or dried oregano is widely used in pizzas and for seasoning raw or baked vegetables, preserves, sauces and meats such as veal, lamb and poultry. Due to the antioxidant properties in its composition, it is ideal in reducing inflammation and general stomach problems.

Mint

Due to its aroma, the mint was one of the first herbs to be used in the kitchen. It provides freshness to cooked vegetables, sauces, ice creams, jellies, fruit salads, jams, juices and teas. On account of its scent, mint relieves nausea, stomach acidity, helps in clearing the respiratory tract and is a natural breath freshener.

Parsley

Possibly the most used herb in Portuguese cuisine. To ensure the use of its flavour to the full it should always be used fresh and can be added to soups, sauces, meat dishes, fish, seafood, omelettes, salads, juice and pasta. Health problems that can be treated through the use of this herb include kidney stones, rheumatism and menstrual cramps as well as water retention.

Rosemary

With its intense and unmistakable flavour, rosemary is excellent for seasoning meats, baked potatoes, marinades and sauces. It is equally good combined with seafood, grilled meat, fish, vegetables and salads. Rosemary oil is used in easing problems of the respiratory system (colds, fever, cough, asthma, and bronchitis), muscular system (pains, tension, sprain, bruises) and is also known for its properties in the strengthening of the immune system, improving circulation and delaying ageing.

Thyme

Delicious especially when fresh, thyme is ideal for meats, potatoes, salads, vegetables, tomatoes, meat, fish, teas, juices and soft drinks. It is considered a natural antibiotic, reducing coughing, sore throat and the onset of bronchitis.

Basil

Renown for its strong and intense flavour, it is perfect served with raw tomatoes, in salads, sauces, juices and syrups. High content in vitamins A, B, C, E and K it helps prevent flu, skin problems, headaches while increasing memory and calming the digestive system.
